HABITAT

Clean sea

It grows in the North of the Adriatic,

The cockles are fished and packaged within 12 hours by the fishermen of the OP I Fasolari. Shelled and processed immediately after fishing.

SELECTION 

MANUAL

Manual sorting takes place on board the fishing boat. The ripe cockles are selected while all the rest, not suitable for trade, is thrown back into the sea.

RECIPE

Fasolari au gratin with tomato and Parmigiano Reggiano

Ingrediants:

  • 20 shelled and well cleaned cockles

  • 100 g of lightly toasted breadcrumbs

  • 80 g of tomato sauce

  • QB Extra virgin olive oil

  • 1 clove of poached garlic

  • QB Parmigiano Reggiano 96 months
